GRILLED SALMON WITH CUCUMBER SAUCE
INGREDIENTS
1 lb. Salmon Fillet, freshly washed
1 Tbsp Olive Oil
Sauce:
1 Large Seeded Cucumber
2 Tbsp Light Sour Cream or Yogurt
½ Tsp Ground Garlic
1 Tsp Lemon Juice
½ Tsp Dill Weed
½ cup White Wine
Prepare
sauce in advance. Peel the cucumber, slice in half lengthwise, and remove seeds
with a teaspoon. Chop into 1” pieces and transfer to a small food mill. Add the
lemon juice and grind until uniformly fine. Place a coffee filter into a small
sieve over a pan, and add the ground cucumber. After about 20 mins. scrape the
cucumber solids into a small bowl, and reserve the cucumber juice. Add the sour
cream, ground garlic, and dill, and mix well. Refrigerate.
Wash the
salmon filet under cold water, rubbing the surfaces liberally with a clean
hand. Place in a bowl containing the cucumber juice and white wine. Allow to
marinate in refrigerator for at least one hour, preferably three or more.
Grill
the Salmon on a preheated grill over a low flame, skin side up, for 4-6
minutes. Flip over, and continue for another 4 mins, or until the flaked fish
is still slightly translucent in the center.
Serve
immediately with a generous helping of the Cucumber Sauce.
